Sotol is a spirit while similar in flavor to tequila or Mezcal is bright and slightly grassy, closer to tequila than mezcal. However it is made from a type of shrub, Dasylirion wheeleri, also known as desert spoon, spoon flower, sotol, or common sotol. This is a species of flowering plant in the asparagus family Asparagaceae, native to the arid environments of northern Mexico, and southwestern United States.
Hacienda de Chihuahua was amost the first Sotol entries in the American market. French-trained distiller José Daumas Gil de Partearroyo create an updated expression of this classic spirit. The state of the art production process starts by slowly cooking the plants in steam-heated ovens, natural fermentation with champagne yeast, and then triple distilling in a double-column copper still. Steam-roasted in modern ovens and then triple-distilled in a double column copper-still it is aged for 2 years in French oak barrels.
Sotol Hacienda de Chihuahua is USDA organic certified and Kosher certified. It is Kosher for Passover and Parve.
