The first and only Solera aged/blended bourbon on the market! Using whiskey made in their new stills then kick started aging in small oak barrels and mixed with sourced bourbons of various ages. The final whiskey taken off the solera is put into 500 litre ex Oloroso Sherry barrels to round and complete the proper flavor profile desired. Ex Master Distiller Dave Pickerell has his talented palate and distilling knowledge hard at work creating this bourbon. Notes of orchard fruit, caramel and spice greet the nose. On the palate lively sipper with a punch at 46.3%!
Hillrock is proud to be one of the few “field-to-glass” whiskey producers in the world and the first USA distillery since before Prohibition to floor malt and hand craft whiskey on site from estate grown grain. Hillrock’s commitment to quality embodies the rich history of artisanal distilling in the Hudson Valley. By controlling every aspect of production from planting & harvesting heirloom grains, to smoking our malt, to crafting whiskies in our copper pot still, to aging in small oak barrels and hand bottling, we are able to create the highest quality whiskies reflecting the unique local terroir.
From master distiller Dave Pickerell, this estate-grown, field-to-flask offering makes good use of oloroso Sherry barrels. Look for peach and vanilla aromas, bold raisin and brown sugar flavors and a gentle exit that just hints at Sherry. At nearly 93 proof, the alcohol makes its presence known, so add some water or vermouth if you must. Attractive and substantial squared bottle. Kara Newman, 7/1/2013.
Sweet notes of vanilla, hazelnut, and chocolate meet fragrant leathery oak on the nose, along with chocolate mint and French burnt peanuts candy. On the palate, this bourbon achieves a nice balance of stone fruit sweetness, lively spice, fresh spearmint, and drying oak that strikes a sandalwood note. A splash of water makes it sing. Jeffery Lindenmuth, Winter 2019.
