The acidity of this wine definitely packs a zippy punch. This wine has a funky citrus backbone and will make a great match with shellfish or oysters. There is a saline undertone which probably comes from some natural salt flats that dotted the area. On a cold winter’s night the weight of this wine to gether with the acidity will work well with pork chops, couscous and cauliflower, or any dish with asparugas. Also it is a great wine for al fresco dining in warmer months and grilled chicken with citrus or octopus salad.
The wine comes from the high-altitude wine region east of Madrid where Victor de la Serna's own wine operation Finca Sandoval is based. The young winemaker Juan Antonio Ponce is passionate to produce wines from native varieties. This is his white from Albillo grape from cool-sited vineyards. Very elegant and refined with green apple, stone fruits, green tea, chamomile, spices, and limestony minerality. Multi-layered with a great length.
