The Pecorino grape is a high quality Italian white grape with a little more heft and elegance than Pinot Grigio. It is growm in the Abruzzo and Marche areas. It produces a really high quality crisp, aromatic white that until recently almost never leaves the country. Traditional distribution channels outside of Italy have a hard time selling obscure grapes like Pecorino.
When Pecorino grapes are harvested at the optimal level of ripeness, they exhibit a perfect balance of acidity and sugar. This balance translates into wines that are refreshing and vibrant, with a crisp and lively mouthfeel that keeps you coming back for more. The natural acidity of the grape ensures that Pecorino wines have a long aging potential, allowing them to develop even more complexity and depth over time. While Pecorino isn't the only white Italian wine that can be aged, it is among those that does it best. Most Italian white wines are not suitable for aging. Therefore it is usually best to drink them within one or two years from the bottling date, when the fruity, floral bouquet of these young wines are immediate, fresh and simple. By the second year, the aroma and taste of many Italian white wines start to break down, resulting in a dull flavor. This is not true with Pecorino, thanks to its high acidity, high sugar content and early ripened grapes. There are Pecorino wines that have been aged for ten years, and when opened, they still have an extremely strong flavor.
