Vinification and aging
Soft pressing of grapes, cold settling of the must (5-7°C) and start the fermentation at controlled temperature of 16/18°C. Next stop on the yeasts for 3 months. Secondary fermentation in autoclaves with a fermentation of about 50 days temperature of 14°C. Another stop on yeast fermentation for 3 months resulting in a product with high pressure without the annoying effect of carbon, increasing the feeling of creamy sparkling wine. Next aging in bottle for 30 days before entry info the market.
The company was established in the 1950s. In 1958, Osvaldo Balbinot, forefather of the family, started a small business in the wine-producing branch with his wife Elsa at the beginning, and his son Ernesto a few years later. It was the beginning of a dream that has covered three whole generations.
For three generations we have been carrying on a tradition made of family, love and passion for wine, respecting what nature allows us to make and working with people who share our same ideals, from the first to the last step of production.
On the nose, this has aromas of stone fruit and melon that lend the wine depth and personality. The mouthfeel is bright, clean and refreshing. 8/1/2012
