As fifth generation Hess family, Tim and Sabrina Persson maintain Donald Hess’ founding commitment to craft world-renowned wines from the Napa Valley and Mount Veeder. They continually challenge convention to deliver wines of distinctive character and pursue innovation with the Hess winemaking team to develop complex wines that reflect a true sense of place. The name Lion Tamer has become our nickname for Malbec because we use this grape as a blending variety to tame powerful tannins. This Cabernet Sauvignon brings all the roar of Napa Valley and when blended with a touch of Malbec, produces a big, lush wine that finishes with smooth and tamed round tannins.
Lush and fleshy, with cassis, boysenberry and blackberry preserve notes guided by hints of alder and mesquite. Stays open but defined through the finish, with a buried hint of sweet tobacco. Drink now through 2027. 8,052 cases made. James Molesworth, 6/30/2021.
