All Sangiovese from the San Marcellino Vineyard which was planted by Marco’s father in 1966. This is where the estate best wine originated from since the old vines produce fruit of incredible concentration. Depending on the weather, the grapes for the Rosato are harvested by hand between mid-September and early October. The grape must is then fermented for about three weeks in steel tanks at a controlled temperature of 16 degrees. During the following four months, the young wine remains at 10 degrees on the natural fine yeast allowing for it to soften, balancing its natural brisk acidity.
Aromas are delicate yet fresh and floral, hinting at violets, wild raspberries and crushed stones. Despite the gentle fragrance, this is not a dainty rosé by any means. Rather, there are some light tannins present along with deeply concentrated Bing cherries and blood orange fruit. Like all of our favorite rosé’s this is no stranger to a pool party, but has the structure and complexity that make it perfect for the dinner table.
