Like Sangiovese Susumaniello is a very versatile grape, it goes well with savory dishes such as stuffed aubergines and peppers, orecchiette with tomato sauce, risotto with porcini mushrooms. Also it pairs well with cold cuts, semi-cured cheeses and grilled meats. This wine sees no oak: it is fermented in Stainless Steel Vats, with 10 days of skin contact and then aged in Stainless Steel Tanks. Then the wine spends 2 months in the bottle prior to release.

This young wine needs to breathe, open at least two hours before serving!

The winery is best known for its use of Susumaniello and it is one of the few that make 100% varietal wines from this grape. This little knows grape is indigenous to Puglia in Southern Italy. It is grown almost exclusively in the Salice Salento area, and in a tiny number of vineyards around Brindisi in the heel of Italy’s “boot”. It ranks among the world's rarest wine grapes. DNA profiling shows that the variety is a natural cross between a Puglian table grape and the white-wine grape Garganega. It is a black grape whose production decreases harvest by harvest as the vine grows older, which is not ideal in a market where most winemakers aim to maximize their production. Therefore this grape has been overlooked by wineries in the region, standing in the shadows of the more popular and mass produced grapes like Primitivo, Negroamaro and Cabernet. 

The nose conveys aromas of charred earth, mature plum and a hint of coffee bean. The soft, dense palate offers juicy black cherry, pomegranate, licorice and a note of black pepper alongside ripe, velvety tannins.

There's a brambly, spicy edge to the enticing raspberry and blackberry aromas in this wine. The palate is plush and rounded, filled out by juicy berry flavors that are framed by gentle tannins and lifted acidity.
